Introduction to Beizi

Beizi, a kind of baked pastry peculiar to some western areas of Inner Mongolia.

Beizi made by the Hui People is very famous in Hohhot, which varies in flavor from plain, salty, red bean paste, to sweet; in shape from round, square, triangle to cow-tongued shape. In cooking Beizi, Hui people stress “three cleans”: the cook’s hands to knead the dough, the basin to hold the dough, and the kneading board must be clean enough.

Beizi is mainly made up of fermented wheat flour with soda, oil and eggs. It is crisp outside and soft inside, and is often eaten with pickles. It is a popular food in breakfast and  travelling. for it is easy to carry and digest.
