Roasted whole lamb is a most luxury dish to entertain distinguished guests. The cooking procedures of roasted whole lamb is demanding. A sheep is chosen, skin and hair removed, pickled, seasoned, hung into an oven, roasted for hours of three or four until it is well done. It is golden, sleek and crisp outside, and tender and fresh inside. Before it is served to the quests, a piece of red cloth is fastened onto the sheep’ horn, and the whole sheep is presented to the quests.
